Miljövärdeflödesanalys av Risifruttiproduktionen : En utvärdering av värdeflödesanalys och miljövärdeflödesanalys

This report is the result of a thesis work carried out on the Risifrutti production at the company Procordia Food AB. The thesis is at a master level and is the final work for the author to receive a Master of Science in Innovative production at Mälardalen University. The thesis comprises 30 credits and has lasted for 18 weeks. The thesis is mainly a research on whether it is possible to perform an Environmental Value Stream Map (E-VSM) in a food processing industry and an evaluation if the tools E-VSM and Green Performance Map (GPM) are useful in this type of industry. An extra part to this research is to use the results from the E-VSM and give Procordia Food AB information on improvement potentials in the Risifrutti production. The author has found it difficult to collect some of the quantitative data to the E-VSM, mainly regarding energy, but by using the Value Stream Mapping (VSM) tool and other Lean tools the author was able to identify and quantify several wastes in the Risifrutti production. Recommendations for improvements based on these wastes have been given to the company. In the research part of this report the utility of the Value Stream Map, Environmental Value Stream Map and Green Performance Map in a food processing industry have been analyzed. The author has found that the Value Stream Map has been a useful tool since waste and unevenness in the tact of the production has been identified. The Environmental Value Stream Map and the Green Performance Map are also great tools when a company wants to analyze their environmental impact and then invest in environmental improvements. However, no profound energy analyzes has been done in the Risifrutti production because of the lack of energy meters for steam, electricity and compressed air in the production lines..

Kostansvarigas uppfattningar om införandet av ekologiska livsmedel i skolmåltidsverksamheten

The purpose of this study was to examine how food managers of Östergötland County disucss around their possibilities of reaching the government´s orientation towards 25 per cent of the food - procured, prepared and cooked in the school meal - coming from certified organic production. The study was a cross-sectional study in wich a qualitative approach was used. The sample consisted six food managers in Östergötland. Data processing was done through a semantic content analysis.  The result showed that involvment and intrest were significant factors for the introduction of organic food in the school meal. The three municipalities with the highest percentage of organic food used the SMART - concept.

This paper argues that the food industry in general and the one taking place in Scania in particular, are disregarded in the official management of industrial preservation carried out in Sweden today. Despite the articulated ambition of a cultural heritage that as many as possible could identify with, the practice tend to create an industrial heritage based on stereotype ideas about the landscape in Sweden and the characteristics of industry. The way the open land of Scania differs from the traditional image of the appearance of Sweden, is used as one possible way to explain why the food industries of Scania are overseen in the management of industrial heritage. It is also argued that the high number of female employees might bee a reason why the food industries in general are given low priority in the practice of cultural heritage. The cocoa produced in Fiji is exported to industrialized countries for processing of the raw material. The Swedish organization Cocoa Bello is involved in a project to provide the Fijian cocoa farmers with knowledge as well as resources to enable local processing and to attain added value of the cocoa crop. The purpose of this study is to discover a field of application for the Fijian cocoa among the rural population, using an ethnographic design. We spent one week in Namau Settlement, Fiji, where we applied in-depth interviews and participant obser-vations in six families. We found a number of aspects affecting food choices, such as social, economical and cultural beliefs.

The aim of this literature review was to make a comparison between the feeding requirements of Swedish reindeer (Rangifer tarandus tarandus) and meat producing cattle (Bos taurus) within farming. Reindeer are an intermediate feeding type; they have the ability to adapt to short term seasonal changes in food. They avoid eating fibre as much as possible and display highly selective behaviour while foraging. Adaptation to harsh environments with a limited amount of food has made reindeer dependent upon easily digestible food and consequently their digestive systems are less capable of processing plants with high fibre content. Herding is an extensive system which requires a significant amount of land and labour and describes the reindeer industry.

Communicating ethical sourcing : the case of palm oil in the Swedish food industry

Palm oil has been used in processed food commodities since the 19th century. An increasing demand for regulating and ensuring a more sustainable palm oil production has resulted in various initiatives. However, these initiatives have received critique due to lack of compliance and insufficient revisions of palm oil plantations. The initiatives for creating an ethical, social and environmentally sustainable production are not sufficient for the Swedish industrial users of palm oil. As a result, stakeholders such as Swedish food processing companies, commit to ethical sourcing codes of conduct that go beyond the international palm oil initiatives.

Sustainability reporting within the food industry : a case study of regional differences in the plant-based non-dairy industry

Sustainability Reporting has emerged and transformed over the past decades as a voluntary practice by companies across industries that desire to show proof of good conduct and environmental; social; and economic responsibility. As industrial food production is one of the largest contributors to contemporary environmental problems, it might be expected that reporting within the industry would be both well established and well understood. Unfortunately, it is neither. In light of the food industry?s considerable environmental impact and the growing popularity of plant-based food as a more sustainable alternative to dairy products, this paper assesses and briefly discusses the Sustainability Reporting of two companies in the plant-based food and beverage industry. The research was designed to compare the practices of Europe-based Alpro and US-based SoDelicious, and this study has two major purposes: to describe the reporting of the case companies and to subsequently compare their practices to the other as well as to global reporting standards. The empirical study in this paper was conducted through content analysis.

Matregionen Södra Roslagen : en etnologisk studie om lokala beskrivningar av en regions mat

North of the city of Stockholm lies the area called Södra Roslagen composed of several municipalities. The purpose of this essay is to discover how local informants describe the food culture of the region and analyse why some types of food are mentioned and others are excluded. Several people within the food industry of Södra Roslagen were given surveys asking them to describe the food habits of the area, from commodities and certain dishes to traditions. These answers were analysed using the theories regional food, regiocentrism, revitalisation, placeless food and the idea of viewing culture through the long and the short perspective.One informant mentioned that professionals in the food industry of the region tend to follow trends from the rest of the world and another that many producers work with ecological requirements. Södra Roslagen was also defined by some as having a taste of summer as this coastal area sees an influx of visitors during that season.
